This is a very simple raw carrot cake, just enough to hush a sweet toothsimple carrot cake
1 cup shredded coconut, processed into a rough flour
2 carrots, peeled and chopped into chunks
1 tablespoon maple syrup
2 tablespoons coconut oil
cinnamon
ginger (fresh or powder)
nutmeg
raisins or currants(optional)
chopped walnuts or pecans(optional)
Process all of the following, except for the raisins and walnuts, until a kind of coarse wet dough forms(adjusting the sweetener as needed). Then stir in the raisin and chopped walnuts. Press this dough into a spring form pan, let firm up a bit in the fridge, and garnish with sliced apples.
You may choose to add an icing to top this cake, i tried an experimental icing that didn't quite work out. But a maple pine nut frosting, or a simple agave lemon glaze could be just the ticket. Have fun with it !

Such a beautiful cake! I tried making a raw carrot cake a long, long time ago and I didn't like it at all.
I think that I had used ground almonds as the base, though. I shall have to try this version with the coconut!

Yay! Thank you Malin. It did turn out pretty moist, but it was also kind of crumbly. I'll try again, maybe with dates. yum !
