It seams strange to be back home after one month in Oklahoma, where i spent the fastest four weeks of my life! I feel a little bummed to not be at the Matthew Kenney Academy today with all of my lovely chef friends. After all, it's Monday and i feel like i should be learning something new and exciting about raw food!
I did make a nice welcome home salad for myself today, and i extremely enjoyed it! I saw this recipe a couple of weeks ago, and i knew that once i got home i would have to make a salad with hard boiled eggs in it. Also, i don't know if it is just me, but i always feel like I'm eating British food when i have a hard boiled egg in my salad . . . am i a little nuts, or do other people feel this way? I am Very curious to know!
1- 2 hard boiled eggs, cooled and quartered
a nice amount of bitter lettuce, or designer greens(i prefer a tender lettuce for this salad, but that is your call)
1 tangerine, peeled and chopped
1 T olive oil
2 T apple cider vinegar(i like the kick from the vinegar against the creamy egg)
1 tsp dry rosemary
1 tsp dry oregano
1 tsp dill
salt to taste
Combine the dressing ingredients in which ever way pleases you(i like to shake/mix mine in a jar . . . with a lid please!) Add the torn lettuce pieces to your serving bowl, the tangerine bits in the center of the bed of lettuce, then arrange the egg quarters around the edge of the salad, like border. Drizzle on the vinaigrette and enjoy!
OR, completely disregard my salad arranging tips, and do whatever the heck you want, it's your salad after all and it should make you Happy!
I am happy to be home at the same time, it seams sort of different then when i left, it's kind of a refreshing feeling to be back. But really, i don't know, I'm just babbling!
