Today was a lot of fun . . . big surprise huh? We made Veggie Hand Rolls today, with a Wasabe Mayo and an Almond Tamari Sauce. Oh and i don't know if you noticed but i decided to get a little fancy with my wasabe mayo by garnishing it with a baby Bok Choy center, it was so cute i just had to use it for something !
The hand rolls enclosed the vegetables that we had been practicing our perfect julienne skills on. I really love chopping vegetable . . . and fruits and nuts, but i definitley still need to work on my knife skills which isn't a problem for me because . . . I love chopping!
We also made Custom Kale Chips which finished dehydrating today. We got to create out own sauce recipes, and then today we all went around the room and shared our chips with everyone in the class!
This is what my sauce was made out of:
Sesame Basil Kale Chips
fresh kale leaves, removed from spine
fresh basil leaves
white sesame seeds
Combine the cashews basil leaves lemon juice and salt in a food processor, blend until smooth and creamy. Evenly massage the sauce into the kale leaves, spread out on a teflex dehydrator sheet and top with a combination of sesame seeds and dulse flakes.
I will write down the specifics and amounts for this recipe soon!
Oh and one more thing! We made our own Custom Smoothies today. This was mine:
1 1/2 ruby red grapefruits, peeled and segmented
1 2/3 frozen bananas, chopped into chunks
1-2 tablespoons raw honey
a pinch of salt
1/4 teaspoon lavender buds(I LOVE LAVENDER)
Combine all of the above, except for the lavender, in a blender until smoothie. Pour into desired serving glass and sprinkle with lavender buds.
Edit : Some people likes this smoothie(i did, but i like everything !) and some people didn't, but my instructors suggested that next time i could make a tea with the lavender and use that in the smoothie instead because the lavender buds floating in the smoothie could be a little off putting. I thought that was a Fantastic idea. I was even thinking that next time i could freeze the grapefruit segments so that they are like ice cubes, which would thicken up the smoothie nicely. Or i could freeze the lavender tea in to ice cubes, that would be really lovely too. It think I'll have to give this smoothie another try!
